A dear friend shared a soup recipe that she likes. In giving it a try, I discovered the oh-so-simple concept of ginger broth. While I regularly prepare chicken broth, had somehow never considered ginger broth. And ginger is a favorite flavor.
In addition to the yummy flavor, the broth, made from immune boosting foods, is quite healthy.
There is not a strict formula to a tasty ginger broth. But it goes something like this:
- a few TBSP of olive oil
- 1 yellow onion, chopped
- at least an inch (I like more) of fresh ginger, sliced
- at least 5 cloves of fresh garlic, smashed or chopped
- 4.5 cups of clean water
- Soy sauce
- Miso paste
- Lime juice
Add the olive oil, onions & ginger to a pot. Saute on medium heat until softened a bit. Add the garlic and cook a few minutes. Add the water, bring to a boil, reduce heat to medium and cook for about 10 minutes. Strain. Return to the heat and add the soy sauce, miso and lime juice (per your choices, I am not a miso person, but apparently makes it that much more yummy).
If you choose to create a soup, get creative with flavors you like that are complementary with ginger. Think green onion, carrot, cabbage, basil, mint, meat and more. Most can be added raw if that sounds tasty.
I most like the broth all by its lonesome. My friend likes to use the ginger infused onions on her veggie burger. Double it — a single batch is gone in flash.

Wonderful! Love the idea! And this will be a good broth to offer my vegan house guests as they come through on their travel trajectories. Think I’ll use organic ghee and keep the olive oil off the stove, but ….. perfect. Thank you 😀
